Hello dear readers, Welcome to yet another episode of “Cook Along with Ayesha”. I have a very special recipe that I will be making today. It’s my favourite dish, and my grandma used to make it for me every birthday. Since my birthday fell during the winter, I would always travel to Lahore to celebrate my best day with my grandparents, Nani and Nana. My mother cooked it after my grandma passed away, and I never asked her to teach me how to cook it until I was an adult and a dentist.
The name of this aromatic dish is , yeahhh! You guessed it right, it’s chicken matka Handi.
A “Matka” is a clay pot, is a traditional cooking vessel made from clay, it has a rich history that spans across civilisations including those in the subcontinent, these pots / matka play a significant role in the culinary traditions of various cultures, they were integral to the cooking practices to this day.
Since this dish is made using a clay pot, hence the name, matka Handi
Ingredients
Bone less chicken pieces
1 cup yogurt
Chopped onions
Tomato purée
Cooking oil
Garlic chopped
Chilli powder ( according to your taste)
Salt ( according to your taste)
Fresh coriander to garnish
Tandoori masala
Cream. For creamy texture
The Cooking Process
Let’s dive into the magical method of creating the perfect matka Handi. For that you will first need a matka/ clay pot. If not available no worries you can still make it in a regular utensil.
1) Marination magic
Marinate the chicken in black pepper, salt, and 1 teaspoons lemon juice. Fry it until the turns golden brown, ensuring that it’s 70% cooked.
2) Sauté
In a matka add butter, then add garlic finely chopped, add onion. Stir fry until it turns brown. Add the fry chicken.
3) Tango Tomatoes.
Make a tomato purée of 2 tomatoes, add the purée into the matka. Mix mix. cook till 5 min on a medium heat
4) Spice masala
In 1 cup of yogurt, add salt, red chilli, tandoori masala, zeera, turmeric powder, black pepper. And mix.. add the mixture into the matka. Cook till 10 min unti oil seperates.
5) Creamy tadka.
Add 2 tablespoons of cream. Mix for a creamy texture.
Garnish with chopped green chillis
