How to Make Poori:
There is a method to making the ideal poori that is both simple and accurate. For a quick start, try this recipe:
Key Components:
two cups of flour made from whole wheat
(For kneading) water
Add salt (to taste).
(For deep-frying) oil
Technique:
Add the whole wheat flour and a small pinch of salt to a mixing bowl.
Water should be added gradually while kneading the dough into a smooth, soft dough.
The dough should be divided into tiny lemon-sized balls.
Using a rolling pin, flatten each ball into a small disc (poori).
In a deep pan with heated oil, fry the pooris until they swell up and become golden brown.
Put the pooris on a paper towel to absorb extra oil.
For Chana masala
1 cup of overnight-soaked dried chickpeas
Two large pureed tomatoes
One large onion, chopped finely
two minced garlic cloves
1 inch of grated ginger
One or two chopped green chilies
One tsp cumin seeds
One tsp powdered coriander
Half a teaspoon of powdered turmeric
Half a teaspoon of powdered red chilli
Add pepper and salt (to taste)
leaves of fresh coriander (for garnish)
Cooking oil
Technique:
Soak the chickpeas and boil until soft. Put aside.
Heat the oil in a pan and add the cumin seeds. Add chopped onions and sauté until golden brown, once they begin to splutter.
Add the green chilies, grated ginger, and minced garlic. Sauté the food until the raw smell is gone.
Add the pureed tomatoes, salt, pepper, red chilli powder, coriander powder, and turmeric powder. Simmer until the masala and oil separate.
Add chick peas (Chana) , garnish with coriander leaves and green chillis.
